The purpose of the work is to generate a reliable estimate of the amount and type of organic waste generated by key parts of the commercial and industrial sectors in Scotland, namely food & drink manufacturing companies and the hospitality sector and to map these arisings for each region of Scotland. It will build on work already commissioned at a UK level covering the hospitality sector and the food supply chain and will draw on data sources from Scottish Enterprise, Highlands and Islands Enterprise, SEPA, Remade Scotland, SFDF, NISP and the Scottish Government.
